I always buy kumquats this time of year.

Its a nostalgia thing on my part.  My Momma Tom (my mom’s mom) had a kumquat bush at her house and we would eat them until we couldnt eat another.  They tasted much better then I think.  It could be that we never washed them first.  Everything is a little more flavorful if there is a little danger involved.  I wouldnt dare feed my kids unwashed fruit of any kind…but we picked and ate and and survived.  Anywho, I had a couple of pounds of kumquats and decided to make a liqueur…I LOVE citrusy liqueur like Grand Marnier so this should be yummy as well. I washed them and dried them. And gathered my stuff…

Then I made a simple syrup 1:1 white sugar and water. I let it cool completely.  I scored each of the kumquats vertically Then I put a layer of kumquats, a cup of syrup and cup of vodka.  I ended using all the syrup which was 2 cups sugar and 2 cups water.  And I topped the jar off with vodka.

until I was out of kumquats and the jar was full…don’t they look beautiful?

I think it will take several months for it to mature but I will probably sample it in a couple of weeks! Next…Cranberry Liqueur!!! YUM!

Cookie Dough Day

I plan to make several kinds of cookie dough today to put in the freezer.  I will start baking next week after Husbands surgery.  So far here is my list:

  • Sugar Cookie Cut Outs
  • Super Dupers
  • Snickerdoodles
  • Chocolate Chips
  • Peanut Butter Blossoms
  • Linzers

I will also make Cream Wafers (the dough doesnt freeze well AT ALL) and fudge and white fudge. I have no idea at this point what our menu will be for the holidays…or really what day we will all gather at our house for a meal.  This whole surgery thing has me playing things by ear you know? I plan to post a picture of our tree this evening when the lighting is pretty and I can get a good shot.  This is the first year in many that we have had a live tree and I do love the way it smells!

Yep…this is year 20 for us.  I am not EVEN kidding.  We have been at it that long.  TWENTY years.  WOW.  That sounds amazing even to me and I have been here almost every day! This is a video I found on youtube.  Perfect response to all the jabbing we have endured over the years.  I will be the first to tell you homeschooling isnt for everyone…but neither is school. Change of Plans

Husband’s surgery has been rescheduled.  He is one sick puppy.  He started getting a sore throat a couple of days ago and it is getting worse instead of better.  We are headed out this morning (in the freezing cold with a change of rain/snow~BRRRRR) to the doctor to get a CBC and throat culture to be sure it is viral and he is not in need of an antibiotic.  So now we will do this ulnar nerve rerouting thing next week instead.  I hate for his sake it had to be put off but he can’t have surgery with a 102 fever.

If you ordered from my website I will get the orders in the mail tomorrow.  Still having problems getting the video uploaded but about to try again.  I will update you when there is news to tell.

I am going to a sock exchange party tomorrow night at my friend Michelle’s house.  This is the cookie I am taking.  They are YUMMY!

You know…I think I am going to see about adding a link to some of my recipes in printable format…doesnt that sound like a good idea?  So many good ideas…so little time!  I really REALLY need to sew some tomorrow too.  I would like to get some ready-made aprons in my shoppe by the end of the week…best laid plans!

We are still trying to get it uploaded…being a booger!  But hopefully real soon.  If all else fails I will just burn it to DVDs…which was the original plan and evidently the best one!

There’s a cookie exchange going on…here’s our favorite!

This is by far my family’s favorite cookie. People have always assumed they are extraordinarily hard to make because of the delicate pastry and WOW, the butter cream filling. But quite frankly…they are a breeze to make. Keep that to yourselves, K?? When we ran our catering business, Kneadful Things, we probably made well over 10,000 over the 12 years we were in business. Below is a picture tutorial/recipe. As always gather all your ingredients before you start.

You will need:

  • 2 cups flour
  • 1/3 cup heavy cream
  • 2 sticks butter at room temp (do not substitute)
  • sugar for coating cut outs
  • cookie cutter of your choice (the fluted ones like shown work BEAUTIFULLY)
  • flour for dusting your work area
  • Set your oven to 375

For Filling:

  • 1 stick softened butter
  • 4-5 cups confectioners sugar
  • flavoring of choice (I use 1 tsp vanilla extract, and a 1/2 tsp coconut & lemon)
  • Coloring if you like

I use parchment lined cookie sheets.

Cut the butter into the 2 cups of flour with a pastry cutter or fork until it is mealy…like cornmeal. Add cream all at once and mix until thoroughly incorporated.

Roll 1/3 the dough out adding just enough flour to keep it from sticking to the surface (I use a silicone mat). DO NOT over work your dough or your cookies will be tough. Cut what you can from this rolling and set the scraps to the side to use ONE more time. After the second rolling, discard the dough - too “used” to use, ya know?

Place your cut outs into a plate of sugar to coat.

Place the cookies on a parchment lined baking sheet and prick each one with a fork (3-4 times- no need to get “creative” like Husband!).

Bake about 10-11 minutes until set…not browned. Remove to a wire rack till cooled.

Mix your filling ingredients with a mixer until light. Spread one cookie and top with another. Makes a YUMMY sandwich cookie and delish with a great cup of Farmhouse Blend Coffee!

Lucky us!

We had a very good day tooling about the big city and shopping.  Kitchen stores, the boardwalk, bookstores and Italian food.

Our last stop of the day was the “Gucci Brookshires”.  That’s what husband calls it.  It is in the very nice part of town and has an amazing meat and produce market and one of the few places we can get fresh lamb.  We mill around, some how put $114.62 worth of things in our shopping cart and check out.  We walk out the door and look across the parking lot and there is our vehicle with the back passenger side door standing wide open!  My heart sank.  My purse was on the front floor, all our purchases were in the back- probably close to $1000 worth.  Hannah’s 160 gig IPOD was on the seat in the middle section. My cell phone was plugged in in the front section.  Not my regular old cell phone but the one you can dial ANYWHERE in the world with!   Guess what!  All these things were STILL there.  Not a thing was taken.  Someone missed one heck of an opportunity.  Husband said they looked at the door standing wide open and said “Well, there’s nothing in there, the idiots left the door open.”   Probably so. So that was was an interesting end to a very nice day together.  Seriously we had a great day.  The weather was perfect and everyone found the things they were looking for.  Benjamin even bought some escargot he has been wanting to try.

So tonight’s supper will be mussels (another thing we wanted to give a whirl) and escargot!  What a treat!  And Husband said he would make some salmon patties to put on the grill in case we dont like the gourmet choices.  So that is my exciting story to start off the week.  Husband’s surgery will be Wednesday so stay tuned for those results.
