Husband made this originally for lamb chops (my favorite) but lamb chops are impossible to find here. So we use it for pork chops.
In a dry skillet, toast the following until aromatic:
- 2 TBSP cumin seed
- 2 tsp fennel seeds
- 2 tsp cardamom seeds
- 1/2 tsp whole black peppercorns
Let cool and grind with 1 1/2 tsp dried crushed red pepper in a spice mill. We actually bought a coffee grinder specifically for griding spices.
Pour into a bowl and mix will with 2 TBSP minced fresh ginger and 4 garlic gloves, minced.
Rub mixture all over chops and refrigerate 3 hours before grilling as you usually do.
